Roasted Vegetables

This is a delicious, easy recipe that is visually attractive and warms the soul. The crunchiness of the roasted vegetables comes with a kick of flavor in every bite. Add a bit of fun to your shapes when cutting your vegetables!

The best part about making this dish is having the freedom to use your favorite vegetables you love to eat. If you get bored of roasting the same vegetables, you can switch it to using different vegetables, such as brussels sprouts, carrots, cherry tomatoes, and cauliflower - the list is endless!

I typically buy all my vegetables from a single grocery store or farmers market run, so I have my favorite vegetables handy for this dish.

Chop vegetables into bite-sized shapes and dice garlic.

Place vegetables and garlic in a large bowl. Drizzle olive oil over.

Add garlic salt and mix thoroughly. Pour vegetables over a parchment lined pan, spreading them evenly. Sprinkle salt and pepper over for additional flavor.

Roast for 25-30 minutes, and toss vegetables halfway. Once ready, let the dish cool for several minutes before serving. Happy eating!
